Head Chef | £52,000 + £8,000 Bonus | Ingredient-Led Southern European Restaurant | London

An ambitious, ingredient-led restaurant rooted in Italian and Southern French cooking is searching for a Head Chef to run the kitchen as their own business. Working closely with Group Executive Chef Alex Busca, you’ll take full ownership of culture, standards, financial performance and creativity, leading a tight-knit brigade in a produce-driven environment where quality and collaboration are everything.

Rewards

  • £52,000 base salary (48 hours per week)
  • £8,000 annual performance bonus (paid quarterly, subject to performance objectives)

Ideal Experience & Passion

  • Deep understanding of Italian and/or Southern French ingredient-led cooking
  • Passion for fresh pasta and classical technique
  • Strong commitment to sourcing, sustainability and working closely with farmers and growers
  • Background in high-calibre kitchens with strong systems and operational standards
  • Highly organised, calm under pressure and confident managing compliance and paperwork
  • Natural leader capable of running and developing a team of 4–6 chefs
  • Strong experience driving culture, performance and learning within a brigade
  • Collaborative approach to menu development with founders and Exec Chefs
  • Confident managing food cost, GP, yield, waste, labour and overall P&L
  • Ambitious and committed to continual personal growth
